a kettleful of boiling water

2 teaspoons sunflower oil

1 small red pepper, de-seeded and sliced thinly

100 g (3½ oz) baby corn, halved

6 spring onions, sliced

200 g (7 oz) canned white crab meat, drained

2 tablespoons sweet chilli sauce

2 tablespoons tomato ketchup

1 tablespoon soy sauce

2 tablespoons chopped fresh coriander, to serve (optional)
